Sweet, exotic blood oranges are available for only a short while each year. We were able to get a few, blend in some Madagascar vanilla, and make a limited amount of this very special marmalade. It is sweeter than other marmalades and tinged in pink (the foam is even pink when we cook it). Health codes require us to pack it in the jars hot, which means the delicious chewy peel floats to the top instead of being evenly distributed throughout the jelly. A quick stir solves that and ensures you get a bite that is equal parts sweet and tart.
